Abstract

The application of conservation methods is renowned as an effective way for increasing the utilization in the agricultural productions. The objective of this research work is to evaluate through economic indicators the use of Osmotic (DO) and Hot air flow (DAC) dehydration methods in pineapple (Annanas Comosus, Cayena Lisa variety). During this analysis was used the methodology proposed by the NC 34-38:2001 standard with some modifications, while all data processing was developed using tools of Microsoft Office 7. As principal result was obtained that to the coste to produce 550 g were 49.07 and 15.03 pesos for DO and DAC, respectively.
