Determinación de las propiedades de calidad de la piña (Ananas Comosus) variedad Cayena Lisa almacenada a temperatura ambiente

Abstract
La calidad es un atributo complejo de necesario conocimiento para la cosecha y poscosecha de las frutas en sus diferentes formas de consumo. El presente trabajo tiene como objetivo determinar las propiedades de calidad de la piña (Ananas Comosus), variedad Cayena Lisa, almacenadas a temperatura ambiente. Durante el análisis, 50 frutas fueron almacenadas durante un período de 9 días, evaluando 5 frutas diariamente, fueron determinados: pérdidas de peso, IC*, firmeza, SSC, pH, firmeza al tacto, aroma y apariencia general, relacionando cada propiedad antes mencionada con respecto al tiempo de almacenamiento a través de la herramienta de cálculo Excel, Microsoft Office y un panel de expertos monitoreo las propiedades organolépticas de las frutas. Como principales resultados fueron establecidos los estados de maduración representados en una carta de color, además el período óptimo para el consumo se propone a partir del 5to al 7mo días de almacenadas, mientras a partir del 8vo día está apta para ser procesada industrialmente. Todas las propiedades estudiadas demostraron alta dependencia con respecto al tiempo de almacenamiento.
