Bases teóricas para la fundamentación del proceso de extracción de jugo de caña de azúcar para la producción de panela

Abstract
El presente trabajo propone un modelo matemático para la determinación de los principales parámetros requeridos en el proceso de extracción de jugo de caña, por medio de rodillos cilíndricos. Se considera la especificidad de comprimir tallos de caña, lo cual lo diferencia de los otros modelos que consideran la extracción de jugo. El modelo tiene en cuenta la velocidad de rotación, la geometría de los rodillos y las propiedades físico-mecánicas de la caña relacionadas en el proceso.
